Our Favorite Granola Recipe
We are fans of yogurt, berries & granola in our house, whether it’s for breakfast or just a mid-day snack. For years I bought granola from the store, because it was just easy, but I came across this recipe from Katiebird Bakes & thought I would try it out. Let’s just say that I’ll never go back to buying granola from the store again, because this is just so much better & so easy to make. I changed it up & added a few swaps based on our family’s preferences & it’s just the best, if I do say so.
Ingredients:
1/8 tsp ground ginger
1&1/2 cups rolled oats
1/4 cup honey
1/4 tsp cinnamon
1/2 tsp salt
1/2 tsp vanilla extract
1/4 cup coconut oil
1/2 cups sliced almonds
1/4 cup yellow raisins
1/4 cup purple raisins
Directions:
Preheat oven to 325 degrees.
Whisk ginger, honey, cinnamon, salt, vanilla extract & melted coconut oil together.
Add rolled oats, almonds & raisins to a bowl.
Pour honey mixture over the oats. Stir to evenly coat the mixture.
Spread the mixture evenly onto a cookie sheet covered in parchment paper (this helps with an easy clean up).
Bake for 8-10 minutes, then stir the mixture. Bake for another 8-10 minutes. Keep an eye on it to make sure the almonds aren’t burning.
Remove from oven & allow to cool. When it’s still warm, have a little snack because it’s so good warm!
Once completely cooled, put it in an air tight container. I put mine in a mason jar & store it in the fridge.
