Dr. Pepper Cake
After a poll on Instagram, y’all said y’all wanted the recipe to my Dr. Pepper Cake. I actually have no clue where I got the recipe from, but I remember making it early in our marriage. Growing up my maw maw made a version of it using Coke & it was delicious, but Dr. Pepper is better than Coke, in my opinion, so this is why this cake trumps her Coca Cola Cake. If you’ve never had it, and you love chocolate, then you’ll love this. It’s by no means good for you, but I can promise you’ll enjoy it.
Cake Ingredients:
1 cup butter
1 cup Dr. Pepper
3 TBLS. cocoa
1/2 cup buttermilk
1 tsp. baking soda
1 tsp. vanilla extract
2 eggs
2 cups all-purpose flour
2 cups sugar
Frosting Ingredients:
1 cup butter
3 TBLS. cocoa
6 TBLS. Dr. Pepper
1 & 1/2 cups powdered sugar
Directions:
Preheat oven to 350
Cake:
In saucepan, heat the butter, Dr. Pepper, and cocoa until boiling. Remove from heat & cool.
In mixing bowl, combine buttermilk, baking soda, vanilla, and eggs. Mix well.
In a separate bowl, combine flour & sugar.
Combine all 3 mixtures until blended.
Pour batter into a 9x13 baking dish.
Bake for 20-25 minutes.
When the cake if done, remove from oven and poke holes in the cake using a toothpick & allow the cake to cool.
Frostings:
Combine butter, cocoa, and Dr. Pepper in a saucepan; bring to a simmer.
Whisk in powdered sugar and remove from heat.
Once the cake has cooled, pour the frosting over the cake.
